Mula saaga bhajja

One of the most underrated leafy vegetables (Radish Leafs), made with simple spices to enhance the flavour as much as possible. 


Prep time  |  20-30 mins

Cooking time  |  15-20 mins

Ingredients

Radish leaves (mula saga) 40-45 leaves large

Radish, small 1 unit, peeled and sliced

Yellow pumpkin 125 gms, sliced


Tempering Ingredients

Mustard oil, 2-3 tsp

Pancha phutana, 1 tsp

Dry red chillies 2 units

Onion medium 1 unit (Julienned)

Garlic 10-12cloves small, peeled and crushed

Green chilies 2 units

Turmeric powder, 2tsp

Salt to taste


The First Step is to clean the mula saga or radish leaves thoroughly. Watch the video to learn how to identify the good one from the bad. The stem can be discarded or used for the dish as per your preference. Finely chop the leaves and keep aside.



Repeat the same process with the yellow pumpkin and keep it aside. Slice the onions and roughly crush the garlic.


Heat mustard oil in a kadhai. Add pancha phutana (mixture of cumin, mustard, fenugreek, nigella & fennel seeds) and dry red chili. When the spluttering begins, add the chopped onions & saute for 1 minute.


Now add the crushed garlic & green chillies. Sauté the whole mixture for 2 mins. 


Add pumpkin & radish leaves along with salt and turmeric powder. Saute for a min and cover the lid. Cook until the vegetables are partially cooked. That might take around 5-7 mins.


Next step is to add the radish leaves and mix well. Cover with a lid till everything is well cooked.


Your super healthy Mula saaga bhajja ( radish leaves sauté) is ready. Serve hot as a side dish with a rice-dal combo!
